Sweet and Spicy Baked Bean Salad

We love a quick and easy weeknight side dish. This recipe gets its sweet-spicy flavor from Bush’s Sweet Heat Baked Beans, sweet corn, crispy peppers and onions, and tangy cider vinegar.

Ingredients


  • 1 

    (28-oz.) can Bush’s Sweet Heat Baked Beans

  • 1 

    (15.25-oz.) can corn, drained 

  • 2 

    small red, green, or combo bell peppers, seeded, stemmed, and diced

  • 1/2 c. 

    finely chopped red onion

  • 1/4 c. 

    packed finely chopped fresh basil leaves, plus more for garnish

  • 1/3 c. 

    apple cider vinegar

  • 1/2 tsp. 

    kosher salt

  • Freshly ground black pepper

Description

  1. Step 1In a large bowl, combine baked beans, corn, bell peppers, onion, basil, vinegar, 1/2 teaspoon salt, and a few grinds black pepper. 
  2. Step 2Season to taste with more salt, if desired.
  3. Step 3Serve with more basil for garnish.
