If you go crazy for corn, you won't be able to resist this summer salad. This Southwestern version, filled with bell peppers, black beans, plenty of lime and creamy avocado (a must), is a super refreshing dish to bring to your next potluck or block party.
Ingredients

corn
- 1
can black beans, drained and rinsed
- 2
red bell peppers, chopped
- 1
avocado, chopped
- 1/2
red onion, finely chopped
- 2 tbsp.
extra-virgin olive oil

Juice of 2 limes
- 1/2 tsp.
cumin
- 2 tbsp.
Green onions, sliced, for garnish
Description
- Step 1In a large bowl, combine all ingredients. Stir until ingredients are completely mixed and coated in dressing. Garnish with herbs, if desired, and serve.
