Roast sweet potato with Cajun spiced butter

Roast sweet potato whole for this southern-style side, then team with barbecued meat.

Ingredients


  1. 4 small (about 200g each) sweet potatoes, washed
  2. Olive oil spray
  3. 60g butter, at room temperature
  4. 2 tsp milk
  5. 1 1/2 tsp Cajun Seasoning
  6. Fresh coriander sprigs, to serve

Description

  • Step 1

    Preheat oven to 200°C. Spray the sweet potatoes with oil. Wrap each sweet potato in foil. Place on an oven tray and roast for 45 minutes or until tender.

  • Step 2

    Process the butter and milk in a food processor until soft and pale. Add the seasoning and process until well combined.

  • Step 3

    Use a small sharp knife to make a slit lengthways in the top of each sweet potato. Fill with the butter mixture and top with coriander sprigs.
