When we're looking for the easiest summer dinner, skewers are one of our go-to choices, every time. They couldn't be simpler: simply layer on your chosen ingredients, choose a signature sauce, grill, and serve! While we have plenty of recipes we can't get enough of, these skewers—with shrimp, pesto, and lemon—just might be one of our favorites.
Ingredients

medium or large frozen shrimp, deveined, thawed
- 3
lemons, thinly sliced
- 8
skewers, soaked in water 20 minutes

Description
- Step 1Preheat grill to medium-high. Skewer shrimp and drizzle with olive oil and season with salt and pepper. Brush with pesto.
- Step 2Grill, turning occasionally, until shrimp is opaque, 4 to 5 minutes.
- Step 3Grill halved lemons for 2 to 3 minutes
- Step 4Serve skewers with pesto and grilled lemons.
