Curry Tuna Salad Pita Sandwich

Ingredients


  • 5 oz. can of Genova Albacore Tuna in Olive Oil
  • ⅓ cup greek yogurt
  • 2 tbps coconut milk from a can
  • 1 tbsp curry powder
  • 1 tsp kosher salt
  • Squeeze of lemon juice
  • 2 tbsps purple onion, chopped
  • 1 tbsp parsley, minced
  • 2 tbsps chopped almonds
  • 2 tbsps raisins

Description

  1. In a bowl, mix greek yogurt, coconut milk, curry powder, kosher salt, and squeeze of lemon juice until sauce is creamy and thick.
  2. Next, add purple onion, parsley, chopped almonds, and Genova Tuna.
  3. Gently mix until salad is coated with curry sauce.
  4. Take a pita, cut ⅓ top off and stuff with lettuce, onions, and tomatoes slices.
  5. Add generous amount of curried tuna salad and enjoy!
