Curry Tuna Salad Pita Sandwich
Ingredients
- 5 oz. can of Genova Albacore Tuna in Olive Oil
- ⅓ cup greek yogurt
- 2 tbps coconut milk from a can
- 1 tbsp curry powder
- 1 tsp kosher salt
- Squeeze of lemon juice
- 2 tbsps purple onion, chopped
- 1 tbsp parsley, minced
- 2 tbsps chopped almonds
- 2 tbsps raisins
Description
- In a bowl, mix greek yogurt, coconut milk, curry powder, kosher salt, and squeeze of lemon juice until sauce is creamy and thick.
- Next, add purple onion, parsley, chopped almonds, and Genova Tuna.
- Gently mix until salad is coated with curry sauce.
- Take a pita, cut ⅓ top off and stuff with lettuce, onions, and tomatoes slices.
- Add generous amount of curried tuna salad and enjoy!
