cloves garlic
- 2 tbsp.
fresh oregano
- 1/3 c.
extra-virgin olive oil
- 1/4 c.
red wine vinegar
- 2 tsp.
finely grated lemon zest (optional)

Description
- Step 1In a food processor, pulse parsley, garlic, and oregano until herbs and garlic are finely chopped. (This can also be done by hand with a chef's knife.)
- Step 2Transfer parsley mixture to a medium bowl and stir in oil, vinegar, lemon zest (if using), and red pepper; season with salt.
